I have been making a lot of soup this winter. Mostly because it's easy. Also, because I am (usually) guaranteed a lunch the next day.
Make this. It's good. It's easy. Similar to a tortilla chicken soup, and no, you can't taste the pumpkin. Use it for leftover Thanksgiving turkey, that's what we did originally and I've made it a few times since. Can't finish that rotisserie/roast chicken, use it in this. And by the way, feel free to shred and freeze that leftover poultry you may have and then use it later in this soup.
(FYI, skip step two if your chicken is already cooked)
I also like this. I have been on this kick of making soup out of a primary vegetable I don't normally eat much. I like this. Some don't. Oh, and don't eat it cold (I mean, you might like it), but try it hot first. And really, anything topped with bacon and croutons….
And yesterday, I made this. Again, really solid. A good lunch. Charlie liked it, anyway. But what really drew me in was the suggestion of drinking it from a mug.

Spot on. That is exactly what I need. Easy, portable, hot food.
