spectaKALEr

Yes, that's correct. There are TWO servings of vegetables on my plate. I think that is a first. But more surprising is that I like both. Yes, I grudgingly eat peas, I'll put a few obligatory green beans on my plate, I've only begun eating bell peppers in the last couple of years, in general vegetables are not my thing.

But these two recipes are different. The grilled panzanella is a great way to use up all the CSA/garden overflow, and crusty bread makes it delicious. The star, however, is the kale. Apparently I love kale. This is only the second time I've had it, but I again ate the whole lot of it. (I wouldn't count Eric's meager one-leaf portion or G's humor-your-mother-and-just-try-it-by-licking-it). I even took a second bunch from the CSA's help-yourself box of other people's rejects, I traded it for a green pepper (I still have 4).

Anyway, kale is delicious. You should try it. Of course I've only had it with bacon, that may have something to do with it.

  1. Go girl of the leafy greens! I too am going to try and like kale, as one cannot hear enough about how healthy it is. I have planted two types of kale and it's BFF swiss chard in the garden for fall harvest. We will see how it comes up, last year the health-conscious little bunnies devoured it as soon as it came up.

....so are you saying, you also ate the 10 strips of bacon by default :-)

  2. For the record, we only used 3 strips of bacon (as I had 8oz of kale) and G helped with that part.
