Friday Food - mojitos

We have mint. Mint is a very invasive plant. Therefore we have a lot of mint.

Mojito
(recipe adapted from WS The Bar Guide)

6 fresh mint leaves (I like more)
1.5 T simple syrup
1 T fresh lime juice
2 oz light rum
2 oz club soda


Tear up mint leaves and put in bottom of tall glass. Add syrup and juice and muddle (or squish and mash against the bottom with whatever you have around). Fill glass with ice. Add rum and soda. Stir and garnish with lime wedge and mint sprig.


Best enjoyed on a hot day (but also nice with old and new friends on a cool-ish evening :).
