Friday Food - agua fresca

I have found a perfect use for the mass quantities of cucumbers gracing our kitchen - the cucumber-lime cooler. Very refreshing. Both kids also like it, bonus.


Cucumber-Lime Cooler 
(adapted from Paletas by Fany Gerson)


1 large cucumber
4 cups water
1/3 cup freshly squeezed lime juice
1/3 cup simple syrup


Rinse cucumber. Leave the skin on and slice it. Put cucumber and water into blender and whirl until pureed. Strain through a fine mesh sieve into a pitcher, then add lime juice and simple syrup. Refrigerate until cold and serve over ice with a mint sprig. 
(also fantastic with a splash of vodka, if you are so inclined)
