puff balls

I've been wanting to make gougères. We were having spaghetti and meatballs and I needed some sort of bread, relatively quickly, so I finally made them.

But I'm not sure on the exact pronunciation, so when asked what the little things on a plate being delivered to the hole basement, as a snack, were, I simply replied, 'cheese puffs'. Because that's pretty much what they are. Cream puffs without the cream, but with some cheese baked in, with a fancy french name.

They are supposed to be kind of bland, the perfect accompaniment to a bracing cocktail. 
I can't have a bracing cocktail, so later I found them a perfect accompaniment to salami, sharp cheddar and mustard.
